Hi Tenae, you can generally go to dividing and shaping the conchas right from the fridge, but they will rise more slowly when you do so. You might want to divide the dough and do a light preshape and let the dough balls sit on a floured surface (covered) for about 45 minutes to an hour before doing the final shape and topping the conchas. This will help ensure that they rise a little more quickly.
