Pinakbet
Pakbet or Pinakbet is a native Filipino dish that means mixed vegetables.

Ingredients:

1/4 kilo pork with fat, cut into small pieces
-
2 pieces amapalya (bitter melons), sliced
-
2 pieces eggplants, sliced
-
1 cup squash, sliced
-
5 pieces okra (lady finger), halved
-
2 to 3 pieces siling haba (long green chili)
-
1 head garlic, minced
-
2 onions, diced
-
5 tomatoes, sliced
-
1 tablespoon of ginger, crushed and sliced
-
4 tablespoons bagoong (shrimp paste)
-
3 tablespoons oil
-
1 1/2 cups water
-
ground pepper
Procedure:
1) In a pan, heat oil and fry pork until brown, remove pork from the pan and set aside.
2) Using the same pan, sauté garlic, onion, ginger and tomatoes. Cook for 2 to 3 minutes. Add pork and shrimp paste and cook for 2 minutes more. Then add water. Simmer.
3) Add in all the vegetables and cook until they are done, be careful not to overcook the veggies.
4) Season with ground pepper. The shrimp paste is already salty, but you may still add salt if you like.
5) Serve hot with steamed or garlic rice.
