Pork Jerky (Ba Kua)

My kids love munching on pork jerkies so when i found the recipe from Kooky Culinary’s blog, I tried making it on my own.  I didn’t realize that it’s so easy to make.  Thanks to Kooky Culinary for the recipe.  :)

Ingredients:

  • 2 lbs ground pork
  • 300 gm sugar
  • 3 Tbsp soya sauce
  • 1 Tbsp fish sauce
  • 1 Tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 1/2 tsp five spice powder
  • 1/2 tsp pepper
  • 1 tsp shaoxing wine or brandy
  • 2 Tbsp water
  • Few drops of rose paste (optional)

Procedure:

  1. Mix everything together & marinate for 1 hour or more
  2. Preheat oven to 175 F
  3. Place ground pork on parchment paper on a baking sheet and spread as thinly as possible
  4. Bake in oven for about 13 min  (depends on thickness) till firm to touch
  5. Flip over & bake for another 10 min (optional but I did this for easier handling)
  6. Remove from oven & cut into pieces
  7. Grill it on the BBQ grill or you can freeze it to be grilled later. If freezing, place the bak kua in between parchment paper so that it will be easier to handle when you want to grill it later.

    I love bak kwa :) dunno how to make on though, we just buy whenever we go to Malaysia or Singapore. Hehe.
