Your family will love this healthy and yummy egg not only for breakfast, it could be a good afternoon snack too.  Make sure you remove it from heat right before they are completely cooked so eggs won’t end up too dry.

Ingredients:

Procedure:

1.  Vigorously whisk eggs with cheese and chives in a bowl.  Season with salt and freshly cracked pepper.

2.  Heat a non-stick pan over medium-high heat.  When the pan is very hot, pour in whisked eggs.  Reduce heat, and use a flat wooden spoon to push the eggs around the pan.

3.  Serve over toasted bread.

    I also like my eggs this way, but hubby wants eggs cooked thoroughly, as with baked chicken; moist to him means undercooked 🙁

    And the meatballs, I would love to have meatballs flavored with all the ingredients you have (for the sub post) but hubby is not a fan of meatballs or meatloaf with veggies 🙁 (I am missing a lot of wonderful flavors!)

    yummy! this is one of my favorite afternoon snacks! I only scrambled the egg alone…with no chives, pepper and cheese. I only put some salt to taste. My family loved my simple scrambled egg with toasted bread, much more if I use your recipe. I’m sure my kids would drool over them! Thanks!
