Cheese and Mint Ka’ak (Middle Eastern Bagels)
Ka’ak are a type of Palestinian/Lebanese bagel that come in many shapes and sizes (with and without holes). You can serve them with za’atar, labneh, and fresh vegetables for a satisfying breakfast. Or you can go the extra mile and do as Yotam Ottolenghi and Noord Murad do in their cookbook, Extra Good Things: Cut the ka’ak in half, fill them with herbed halloumi, and then griddle them until the sesame seeds on the outside are extra crunchy and toasty. The final product is cheesy, crispy, bready, and absolutely irresistible.
