For a perfect roast, they say it is best to sear it first before placing in the oven to sear the juices.  But you don’t have to do that all the time, here’s another trick, crank up the oven to 450° F.  Then, once you slid in the roast, reduce the temperature to the one specified in the recipe.  This process will save you time from searing the roast and your meat will turn out crispy and moist.
