Steaks with curled edges not only ruin your presentation but meat loses moisture, making them look dry.  Without moisture, they shrink, causing them to curl.  For flat steaks, use a pairing knife to cut slashes (1 inch apart) along the outer edge of the steak.  Doing so will allow the meat to contract without affecting the steak’s overall shape.
