You know vegetables are more nutritious when unpeeled, but if you are more on presentation, they can make a dish look unattractive.  If you want to get the best of both worlds, I have read that the trick is to peel your veggies after cooking.  Half of the skin’s nutrients will seep into the veggies.  Plus, they will be easier to peel.
