Marinating meat can backfire if you are using store-bought marinades.  These marinades often contain a high concentration of enzymes and acids that can leave meat mushy and tasteless.  For a yummier chicken, try this instead, whisk together two parts acid (vinegar, citrus juice or wine) and three parts oil, plus spices to taste.  Then  soak meat in the mixture 2 hours at most.
