To sweeten out-of-season corn, just add a little sugar to the cooking water (about 4 teaspoons/gallon of water).  The “prolamins” in the corn can taste bitter when out of season, but cooking the ears in a light sugar solution will restore the kernel’s sweetness.  Don’t add salt to the water because it will toughen the kernels.
