1) Marinate chicken halves for 30 minutes or an hour in a mixture of honey, hoisin sauce, water, salt, pepper, garlic, scallion, and ginger.
2) Heat oven to 350°F. Place chicken halves on a Dutch oven and bake for 30 minutes, brushing occasionally with the marinade.
3) Turn oven to broil and broil chicken halves five more minutes. Turn wings every two minutes to avoid burning.
4) Slice or chop then transfer chicken to a serving platter. Serve hot with hoisin sauce.
