When I don’t have much time to prepare food, this roasted chicken is a real life saver.  So I always make sure I have one marinating in the fridge and just pop it in the oven to cook.

I don’t actually have a recipe for this because I just marinate it with a 12 oz. bottle of Seven Up or Sprite and salt and pepper.  I put it inside a plastic bag and marinate it overnight in the fridge (I keep it in the freezer if I’m not going to cook it in the next few days).  Bake it in the oven (350°F) covered with aluminum foil for forty minutes, then take it off the oven.  Removed the foil and rub the skin with butter.  Put it back in the oven and bake for another 20 minutes.
