Wordless Wednesday

This is a spicy pork dish that originated from Bicol province.  The pork is cooked with coconut oil and simmered until tender.  Slices of green and red chili were added for the kick.  It’s best eaten with steamed or garlic fried rice.

    We eat with our eyes, and because we do, we look for taste. Which this seems to be this meal! Tender and succulent, the pork is mild, so the heat of the peppers is a fine addition. Dinner is what time???

  6. This looks like it could be easily adapted to tofu for those with a vegetarian palette. I imagine the coconut oil would contribute to the flavor and I love cooking with chilies.
