This month, we’re going big on flavor. The markets may not be bursting just yet, but we can still lean into bakes that pack a major punch. These include a flaky pastry with a hidden filling of vibrant guava; carrot cake in breakfast form; and a cake that calls for every part of an orange.

Wait, do you really have to grease parchment paper? : It’s not overkill, we promise.

Sometimes a recipe will tell you to grease the baking pan, line it with parchment paper, and then grease that parchment, too. Having spent a few years answering calls on our Baker’s Hotline, I can attest that “Do I really have to do this?” is a very common question.

Since I moved to Los Angeles nearly a decade ago, people back home in South Carolina have been asking me what I miss the most about living in the South. They usually expect me to cite less traffic (it’s really not that bad here) or better manners (you’d be surprised …). But the answer I give every time is easy: biscuits. I miss good biscuits!

With a few exceptions, it’s hard to find the biscuits I love outside of the South. And so, like many bakers, I’ve had to turn to my own kitchen to satisfy my cravings.

Homemade pasta is great. Homemade pasta with a cheesy, herby, filling? Even better.

Whether you’re comfortable making homemade pasta noodles and want to level up to filled shapes or just making fresh pasta for the first time, homemade ravioli is easier than you think. The whole process can basically be broken down into four steps: roll, fill, shape, and boil.

Here’s how to master them, step by step:

A guide to different ribbon-cut pasta shapes : Everything from lasagna to linguine.

There are literally hundreds of pasta shapes — some universally known, some others deeply niche and regionally specific. Some are made by hand, others require an extruder, and some are made using a roller-style machine, which are available as standalone hand-cranked versions or as an attachment for your stand mixer.

This guide will break down some of the most common types of long, ribbon-cut noodles that you can make with a roller-style machine, ordered from the widest to the narrowest (with notes on the thickness of the noodle, which can also vary).

The tools you need to start making homemade pasta: My pasta-making starter pack.

Perhaps one of the biggest misconceptions about making homemade pasta is that you need an arsenal of expensive tools to do it. But this couldn’t be further from the truth. If you’re new to pasta-making, know that you can whip up delicious noodles with what you already have in your kitchen. Of course, that isn’t to say I don’t cherish my own collection of hand-crafted ravioli stamps and brass pasta cutters, or that there aren’t a few handy items I’d recommend to get started.

If you’ve ever dripped a bit of water into a bowl of melted chocolate, you know what happens next: The silky mixture suddenly seizes up, becoming a thick, grainy mass, and no amount of whisking will restore it to its satiny glory. That’s because chocolate and water don’t mix, right? Well, yes and no.

We all know and (secretly) adore the store-bought slice-and-bake sugar cookie logs that, when sliced, reveal a design in the center of the cookie. But as a professional baker, I couldn’t resist making a from-scratch version. So ahead of Valentine’s Day, I started working on a copycat recipe featuring a sweet red heart inside a lemon cookie dough. Behold, lovers: Slice-and-Bake Valentine Cookies.

Homemade pasta can be intimidating but trust me: It’s much simpler than you think. Fresh pasta dough is as easy as mixing flour and eggs — and then comes the rolling. If you’re new to using a pasta machine, there may be a slight learning curve, but it’s easy to get the hang of things.

I've tested over half a dozen bread machines. This is my favorite.: One machine is in a league of its own.

The first loaf of bread I ever made, when I was 10 or 11 years old in the '90s, emerged from a bread machine. With its pale crust, squashed crumb, and lumpy shape, it wouldn’t have fared well on Instagram. But that didn’t stop my brother and me from devouring it, piping hot right out of the appliance and spread thickly with Country Crock margarine.

Light vs. dark brown sugar: What's the difference?: And can I substitute one brown sugar for another?

Before we break down the difference between light and dark brown sugar, let’s review what brown sugar is. Originally, it was sugar that retained some of the natural molasses found in sugar cane juice even after processing — unlike white granulated sugar, in which all of the molasses has been removed.

For the best focaccia sandwich, turn things inside out: Make the most of your leftovers.

With its fluffy interior and crisp exterior, focaccia is best served the day it’s made. After 24 hours, what was once a tender and airy bread has transformed into something dry and dense. The brittle bubbles and crisp edges have lost all their signature snap and characteristic crunch. It’s hard to imagine that the focaccia you couldn’t stop snacking on yesterday is the same, stale bread that’s on your counter today.
