Rich in protein and iron, my kids love them baked or cooked like Adobo with lots of garlic.  You can prepare this ahead of time and store in the freezer.  You can also use this recipe for oysters.



Boil mussels in a large pot until the shells open. Discard unopened shells. In a sauce pan, saute garlic in butter, add ginger. Let cook for a few minutes, then pour the tomato sauce. Season. Preheat oven to 350 degrees. Remove and discard top shell of each mussels and arrange on a baking dish/sheet. Apply garlic and ginger mixture to mussels and top with cheese. Bake for seven minutes.
