Arroz Caldo is rice porridge that is traditionally good for the sick, but it’s also great to enjoy on a rainy day. We’ve been having lots of rain these past few days so I thought of preparing this for the family.
In a deep pan or wok, sauté garlic, onion, and ginger in olive oil. Add fish sauce and cook for another minute. Add rice and chicken broth; bring to boil. Lower heat and simmer stirring occasionally, until the rice is done; adding more broth if necessary. Season with salt or fish sauce according to taste. Serve hot in a bow with chicken flakes then garnish with fried minced garlic and scallions. Enjoy!
