Slice chicken breasts in half; set aside. Spread 1 teaspoon pesto on each bread slice. Top pesto with, lettuce leaves, slices of tomatoes and mozzarella cheese, layer on chicken, and top with slice of bread. Heat pan or grill pan to medium-high; add 1 tablespoon olive oil to pan. Place sandwiches in the pan, topping with a heavy skillet. Heat for 2 to 3 minutes on each side. Slice in half and serve.
