It’s always convenient to use pre-ground spices, but sometimes their flavors can be flat.That’s because the natural oils that deliver tantalizing flavor and aroma with intense pungency are released when spices are ground, but they quickly lose potency.  So those bottles that’s been sitting in your spice rack for a long time may have lost some of its punch.

If you want a stronger (and fresher) flavor, it would be best to buy whole spices and grind them yourself before using. It only takes seconds to grind, just give them a quick buzz in a coffee grinder reserved for spice grinding or use a mortar and pestle.
