After all the meats we had at Christmas, this tuna and salami pasta dish made me less guilty.  This is what we had during our New Year’s day dinner. I got the recipe from lattesandleggings.com.

1) Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions. Drain the pasta.

2) Meanwhile, in a large saute pan, heat the oil over medium heat. Add the salami and onions, and saute for 4 to 5 minutes, stirring occasionally until the onions are softened. Add the garlic, olives, capers, red pepper flakes, and crushed tomatoes. Simmer over low heat for 10 minutes, stirring occasionally. The sauce will thicken. Stir in the tuna and pasta, and simmer for 2 to 3 minutes until warmed through. Remove pan from heat. Transfer the pasta to a serving bowl. Add the lemon zest and parsley, toss to combine, and serve.
