Pork Afritada

Afritada is a blend of soy sauce, vinegar and tomato sauce. For this recipe I used pork but you may also use chicken or a combination of both. This yummy dish goes perfectly with garlic fried rice.

Ingredients:

sliced pork pieces
2 cloves garlic, crushed
1 small onion, sliced
sliced potatoes
sliced carrots
1 big red bell pepper, juliened
250ml water
125ml white vinegar
75ml dark soy sauce
1 small can tomato sauce
vegetable oil
salt to taste
2 bay leaves
oregano
peppercorns

Procedure:

Saute chicken pieces in garlic and onion.
Add the chicken slices.
When the chicken slices are slightly brown, add vinegar, soy sauce and tomato sauce.
Then add water, potaoes and carrots and simmer for about 20 minutes.
When the chicken is done add the bell pepper, bay leaves and oregano.
Simmer for another 5 minutes.
Serve hot with garlic rice.

Hubs has an addiction. An addiction to ps3! Ever since we had the console, he’s been glued to it, trying to master all the ps3 games we have. Then he would brag to the kids how he beat the bosses, haha. He gets to spend a lot of time playing while the kids are in school, but he’s off limits during weekends. The kids won’t let him touch it because that’s the only time they can play. Poor hubs will just go back on tinkering his car on those days.

Easy Cauliflower Stir-fry

Ingredients:

1 large head cauliflower
3 cloves garlic, chopped,
1 to 2 tablespoons fresh basil, chopped
1 tablespoon butter
1 tablespoon olive oil
salt and pepper to taste

Procedure:

1) Wash and clean cauliflower. Separate into florets.

2) In a pan, heat olive oil, then add butter.

3) Add garlic and brown a little bit. Add cauliflower and stir.

4) Add basil and cook covered for 2 minutes more.

5) Season with salt and pepper.

My Trip To The Dentist

My appointment with the dentist was set at 3 pm yesterday. Knowing so well that this isn’t usually followed, I brought a book with me in case I had to wait. I arrived at the clinic 10 minutes early and as expected, the doc is still working on another patient. Sharon, his assistant ushered me to the waiting lounge then handed me the remote for the HDTV. Whoa! I’m impressed! Last time I was there, I watched the Asian Food Channel from their small tv that looked older than my teenage son (hehe). Their Samsung unit doesn’t disappoint – on technology or style. The colors are so natural and vibrant. I was glued to the tube the time passed by so quickly I didn’t realize it was my turn already, sigh. I was enjoying it!

I want to have one of those at home… that will be our next project.
