Chicken Inasal
I got the recipe from Food Magazine and it’s been the most requested chicken dish at home since. It’s perfect with garlic fried rice!

Ingredients:
- 1/2 cup vinegar
- 1/4 cup sugar
- 1/4 calamansi or lemon
- 1/4 cup soy sauce
- 2 tbsp crushed garlic
- 1/2 tbsp salt
- 1 whole chicken (quartered)
- olive oil
- achuete [annatto]
Procedure:
1. Make the marinade by combining vinegar, sugar, calamansi, soy sauce, garlic and salt. Marinate Chicken parts for 3 hours.
2. Grill marinated chicken over charcoal.
3. Baste chicken with olive oil boiled with achuete, taking care not to burn the chicken.
